I donâ€™t think I have ever waited a full week to post a recipe. This is what I made for dinner last Sunday evening. It was fantastic! However, several hours after dinner, our fun son passed away, and life went crazy/lazy for a while. That, coupled with traveling for Thanksgiving led to a significant delay, but with NO further delay, hereâ€™s a great, delicious recipe for instant pot shredded chicken taco wraps!
Tomorrow is cyber Monday, and this past Friday was “black Friday,” both of which you probably already knew. One fo my absolute favorite purchases ever (which was either on cyber Monday or Prime day) was our instapot*! It enables you to cook a roast last-minute (like in 45 minutes, with the same effects as if it had been cooking all day long)! There are also tons of other uses - like I use it when I make my homemade kombucha, other recipes, and even popcorn!
Knowing that, and the fact that I love tacos, should make it no surprise that I used the instapot for instant pot shredded chicken taco wraps!
To start, I took a couple pounds of Maryâ€™s Chicken Breasts and put them in the instant pot. I used bone-in (because the bones generally add more flavor), but if I make it again, I will use boneless, both because it is easier to eat, and because the seasoning provides enough flavor to make up for any that would be lost by selecting boneless! I think that distinction is more important with steaks. ðŸ˜‰
Next, I added a package of chicken broth, and topped it with a variation of my taco seasoning!
The reason I wrote “variation” is that for these instant pot shredded chicken taco wraps, I used fresh garlic instead of powdered!
I donâ€™t know about you, but I am definitely someone who usually doubles (at least) the amount of cloves of garlic requested in a recipe, so you may want to use less than me. In fact, when I was doing 21-Day Fix Extreme, I tried replacing my longing for cheese with garlic. It did not work, and I smelled like garlic for a couple days! However, all that understood, hereâ€™s how much garlic I used.
I cut the rough parts off, and put it in my awesome garlic grinder!
If you need the taco seasoning recipe ingredients again, let me help you out! 2tsp paprika, .5 tsp sea salt, 1 tsp chili powder, 1 tsp onion powder, 1.5 tsp cumin, and the garlic above! I make my own taco seasoning because it doesnâ€™t have sugar (or other creepy ingredients) the way the store bought kind does… Plus itâ€™s less expensive, and not difficult!
Next, I added some veggies! You can select them based upon your preferences! I chose a yellow onion, a couple green peppers, and a pound of mushrooms I sliced!
Next, I cooked them in the instant pot for 20 minutes with the valve sealed. When it was done, I used two forks to shred the chicken!
I used some giant and beautiful collard greens that came in my imperfect produce box the Wednesday before as the “tortillas” to make them instant pot shredded chicken taco wraps instead of instant pot shredded chicken tacos!
Then, just top it as you choose! I used organic Greek yogurt (full fat) in place of sour cream for more protein, some aged organic cheddar from grass-fed cows, some sliced cherry tomatoes (also from our imperfect box), and some homemade guacamole to add some flair to mine!
Next, just wrap it all up, and eat like a burrito!
Please donâ€™t judge my manicure! I havenâ€™t had one since I last modeled for Ada Diamonds (you can see pictures of that in my tagged photos on my instagram, or on their homepage! I am waiting for the edits because some of the rings I modeled canâ€™t be shown until the men who custom ordered them propose)! I plan to treat myself to another manicure soon!
